Michael Maurantonio joined the family business over twenty six years ago and immediately immersed himself in learning all disciplines of the business. He quickly realized that this was not a job but rather a lifestyle that would require hard work and dedication. "Owning and operating a catering facility, you must wear many hats...I never found a place where I was needed so much."

Because the Scottos believe in allowing people to gravitate towards their strengths, Michael utilizes his talents with computers at their corporate office and his love for gardening is infused into his responsibilities at the Fox Hollow. He treats this as his home away from home and creates an environment where people will feel comfortable. While you are here you may see Michael trimming a hedge or tending to the needs of a guest. Whichever the case, people recognize him and appreciate him for the product he produces.

Joe Vigliotti ~ Executive Chef

Born and raised in Italy, Chef Joe Vigliotti attended culinary school for six years in Caserta, Italy. Upon his graduation he migrated to the Unites States to work at some of NY's finest restaurants where he received rave reviews and appeared on Bill Boggs Round Table and Bob Lape's Friday Night Restaurant Feature. He has contributed recipes for publication to several magazines and cookbooks and is a member of Chef de Cuisine and The American Culinary Federation.

For 15 years he has graced us with his presence and talents of being the executive chef at the Scotto Brothers Seventh Street Café in Garden City and the Fox Hollow in Woodbury where he now resides.
